Soba Noodles with Tofu and Vegetables
Handful of Soba Noodles
125g Tofu Natural cubed (about half a pack) 100g mangetout (whole) 1 carrot large, sliced 1 handful fresh chives or 1 green onion stalk, chopped
2-3 tablespoons of Olive Oil Extra Virgin Cold Pressed 2 tablespoon soy sauce Pepper Black Ground
Gomasio (Sesame Salt)
Instructions: Bring 5 cups of water to the boil and cook soba noodles until tender. In a separate pan, steam or boil lightly the carrots, peas, and tofu for about 3/4 minutes or untill cooked to your tase. Combine noodles (drained) with vegetables and tofu (drianed) in a large bowl. Add oil, soy sauce, and chives or green onion and toss together. Sprinkle Gomasio (Sesame Salt) on top (to your tase). A delicious low calorie recipe. Serves: 2
