Roasted aubergine with Honey, sesame and hummus in pitta bread
Serves 2
1 organic aubergine 1 tablespoon toasted sesame oil 1 tablespoon balsamic vinegar 1 tablespoon clear organic honey 1 tablespoon soy sauce 1 teaspoon sesame seeds 2 pitta breads 4 tablespoons of home made hummus
Remove and discard (compost) the stem. Cut aubergine into 1cm thick slices, Mix the oil, vinegar, honey and soy sauce together in a shallow flat bottom bowl, then dip in the slices of aubergine, and place under a preheated hot grill until they are golden brown, then turn over and grill the other side. Just before they are done, sprinkle with sesame seeds and cook for a further couple of minutes until the seeds are roasted.
Warm the pitta breads and then open them up. Spread with the hummus and fill with the aubergine slice, serve warm and eat at once.
