Iced lettuce soup Serves 4
900g Lettuce leaves, (outside leaves of lettuce which are too tough for a salad are fine for this refreshing soup) 2tbls olive oil 1 onion, peeled and chopped 2 or 3 sprigs of fresh mint 4tbls single cream Sea salt and freshly ground black pepper
chopped mint to garnish, and extra cream if you fancy it!
Wash the lettuce leaves and shred them. Heat the oil in a large saucepan and add the onion, cover and cook for 5 minutes, after this add the lettuce and mint, cover and cook for a further 5 minutes. Pour in 850ml of water. Bring to the boil and simmer for about 15 minutes. Liquidize the soup thoroughly, and pour through a sieve into a pan. Stir in the cream and season with salt and pepper. Cool, and refrigerate the soup. When serving, garnished with some finely chopped mint and a swirl of cream.
