Glazed Sweet Potatoes

Organic ingredients:
      
500 g Sweet potatoes, peeled and cut into 12 mm thick slices
       tblsp Olive oil

       15 g Corn flour
      
15 g Rapadura Cane Sugar sugar
      
120 ml Unsweetened orange juice
      
tblsp lemon juice
      
Preparation:
1. Place sweet  potatoes in an oven proof dish, and ensure they are well coated in the olive oil.
2. In a bowl mix together the corn flour, Rapadura Cane Sugar, orange and lemon juice to a smooth batter.
3. Pour over the potatoes and stir a couple of times. Cover and bake at 425 F / 218 C for about 40 minutes or until the potatoes are just tender and the glaze has thickened.
