Coleslaw
Serves 6
450g/1lb white cabbage, finely shredded 225g/8oz scraped carrots, coarsely grated 150ml/5fl oz low fat plain yoghurt 4tbls mayonnaise salt and freshly ground black pepper lemon juice (optional)
Optional Additions 2 onions, finely sliced 1 small green pepper, seeded and chopped 100g/4oz raisins
Put the cabbage and carrots into a large bowl, together with any of the optional extras. Add the yoghurt, mayonnaise and salt and pepper to taste and mix well. Sharpen with a little lemon juice if you like, before serving.
