Banana chocolate maple ice

Serves 1

1 banana, not too ripe
1 tablespoon 0% fat Greek yoghurt
2 tablespoons maple syrup grade A

1 teaspoon unsweetened low-fat cocoa powder
½ teaspoon pure vanilla essence
15g/ ½ oz high-cocoa-solids plain chocolate, very finely grated
1 teaspoon chopped toasted hazelnuts

Peel the banana and cut it into even slices, about 1cm / ½ inch thick. Spread them out on a plate or baking sheet and place in the freezer, uncovered, until solid - about 1 hour.

Just before you want to eat the ice cream, put the banana chunks in a food processor with the yoghurt, maple syrup, cocoa powder and vanilla essence and whiz to a thick, luxurious cream, stopping the machine once or twice and scraping down the sides as necessary.

Scoop into a bowl, sprinkle with the grated chocolate and chopped hazelnuts and serve at once.
